Chocolate Protein Pancakes

  • 1 scoop Chocolate or Chocolate Vegan Shakeology
  • ½ banana
  • 1 egg
  • 1 tbsp. coconut flour
  • ¼ tsp. baking powder
  • 1-2 tbsp. water
Instructions
  1. In a bowl mash ½ banana with a fork. Mix in egg and beat until well blended. Add Shakeology, coconut flour and baking powder, and water and stir well. Batter will be very thick – like brownie batter!
  2. Preheat skillet to medium and spray with cooking spray. Spread pancake batter into pan. Cook until bottom is solid – about 2 minutes. Flip and cook maybe 30 seconds more until pancake is done. Enjoy your healthiest and most delicious meal of the day!

I topped mine with a little sugar free syrup, more banana, and some pecans.

Peanut Butter, Almond Butter, Walnuts, many other toppings can complete this delicious and filling breakfast.

MEXICAN RESTAURANTS

I admit my go-to meal at a Mexican Restaurant is Shrimp Fajitas but that certainly isn’t vegan.  So instead, steer your choices towards:

  • salsa
  • guacamole
  • tortilla chips
  • vegetable or bean burritos
  • rice
  • vegetable tacos
  • vegetable fajita
  • vegetable chimichanga

Ask about sour cream, cheese, lard, and that the rice isn’t made with chicken broth.

IndINDIAN RESTAURANTS

I have only been to a few restaurants in my day, but I know a lot of people from India are Vegans or Vegetarians so it’s not surprising that there are many Vegan options at Indian Restaurants:

  • vegetable samosa
  • vegetable pakora
  • saag
  • dal
  • rice
  • channa masala
  • naan bread (check that it isn’t made with yogurt or butter)

Just make sure to ask for no butter, ghee (clarified butter), cream, or paneer (cheese).

Okay, I have to admit I don’t frequent Jamaican Restaurants very often, but here are some suggested animal-free foods to enjoy:

  • rice and peas
  • ackee (no salt fish)
  • curry vegetables
  • bammy
  • vegetable patties

I have to admit, Middle Eastern food is some of my favorite and they have so many great vegan options.  I love the Falafel sandwich at Subway and Middle Eastern restaurants can be found in just about any city with a stop light.  Some fast and cheap options include:

  • falafels
  • coucous
  • tahini
  • vegetable samosas
  • pita bread
  • tabouleh
  • rice

Just make sure to ask for no cheese or yogurt.

AMERICAN RESTAURANTS

It’s no surprise American’s are some of the most overweight people in the world because of all the fast food, pre-packaged foods, and the serving sizes.  There are plenty of vegan options and American Restaurants, but be careful you don’t eat there too much:

  • french fries
  • onion rings
  • potato wedges
  • veggie burgers
  • veggie dogs

Ask about mayonnaise, cheese, and eggs in the ingredients.
