I Finally Made The Spring Rolls

SpringRollsCloseUpI try to eat as little bread/wheat/gluten as possible so picked up these rice paper wrappers in the International isle the other day. Filled them with fresh crab meat, pea pods, shredded carrots, sprouts, and some microgreens. My wrapping skills need some work, but sooood good, and very low-carb.

I have some wrapped up to take in the car with me this week along with some cut up raw veggies and fresh fruit.  Meal planning doesn’t get much easier than this.
