Cold soup on a hot summer day was just what I craved.
- 1/2 cantaloupe, peeled, seeded, and cut into large pieces,
- 1 nectarine, pit removed and cut into large pieces,
- 1/2 english cucumber, peeled and cut into large pieces,
- 1 Tbsp. honey
- 1 Tbsp. white wine vinegar
- 5 basil leaves
- 2 mint leaves
- 1/2 teaspoon pink salt
- 1/2 cup water
In a blender combine all of the above. Blend until very smooth. Refrigerate until cold. It’s on the menu tonight paired with Firecracker Turkey Burgers so I’ll let you know how it turns out.
