So hubby and I are both starting new jobs this week and I will go from working at home 95% of the time, to working from home, but seeing my customers 4-5 days a week, and not sure how many hours a day I will be in my car. Plus hubby will go from working from home, to taking the train into the loop and back and actually going into an office everyday. So…we’ve had the flexibility and freedom to make all our meals hot and fresh, but now that our schedules will be more like everyone else who works a 9-5 job, I had to make a plan.
I had used The Fresh 20 Meal Plan a few years ago and LOVED it. Not really sure why I stopped. But basically I bought a years worth of meal ideas that come complete with grocery list, meal plan, and instructions. The goal is to eat fresh, local produce and use many of the same ingredients more than once throughout the week to reduce waste. I shop fresh almost every week so shopping for a week with an idea of what I was going to make isn’t a new concept for me, but having it all laid out there for me, made it a breeze…and my grocery bill was @1/2 of what it normally is. Now I did have some staples in the house already, but did a quick run to the store over the weekend and prepared the “prep-list” on Sunday night. Now I will make 5 dinners Monday-Friday and each meal will only take 15-30 minutes to make.

Tonight’s creation was already a big hit with my hubby who doesn’t necessarily like all the things I cook. I can’t wait to have the leftovers for lunch tomorrow!
