Don’t let Memorial Day be another day you stuff yourself silly just because you can. I made the Southwestern Black Bean Salad (pictured) and it was packed full of protein rich beans, healthy corn and tomato vegetables, and good fat avocado. A serving of this, some potato salad, and broccoli salad, and I easily took a pass on the hamburgers and hot dogs that were grilled up.
